I’m Scott Watkins; chef, pitmaster, and barbecue enthusiast. I have been cooking since 2004…woah. I have experience in fine dining, casual dining, catering, American, Thai, Japanese, Italian and Barbecue of course.

I started my barbecue journey in 2021 when it was just too damn hot to cook inside. I made some ribs on a Coleman camp stove and they were terrible!

Shortly after that I acquired a Pit Boss pellet smoker and Aaron Franklin’s Barbecue book and the obsession was born. Upon relocating to Oregon with my wife and newborn, I got a job at Paper Plate BBQ and began learning how to smoke with a real wood fire.

After being the pitmaster/sous chef for 2 years I decided it was time to make my dream become a reality.

With a ton of help and continued support from my amazing wife, Harley Q’s Barbecue was born!

I smoke all of the meats we serve daily, nothing is EVER re-heated. I make all of our sides and our sauces in house as well.

Fresh, home-made, and as little wasted as possible is what I truly believe in.
